INGREDIENTS
Â
3 Tbsp butter or margarine
1– 10 oz. (300 gr.) bag of marshmallows
6 cups Rise Krispies cereal
3-4 drops green food coloring, less if you’re using gel coloring
1 tspÂwater
1/2 cup shredded coconut
Chocolate eggs ( I used Hershey’s EggiesÂcookies ‘n’ ‘N’ crème)
Peeps for decoration, optional
Â
DIRECTIONS
Â
Spray 2-12 muffins tins with cooking spray or grease with melted butter.
Â
Line a baking sheet with parchment paper; set aside.
Place butter in a large pot; let melt on medium heat.ÂAdd the marshmallows and stir on low heat until they’re completely melted.
Remove pot from heat and add the Rice Krispies cereal and stir until mixture is evenly combined.
Place about 1/3 to 1/2 cup of theÂwarm marshmallow mixture into each muffin cup. Using the back of a tablespoon press the mixture into the cups to shape into nests. ( If it’s sticking, spray some grease to the back of the spoon).ÂAllow the nests to cool for 30 minutes or longer, until they are completely set.
To make the green “grassâ€:
Place water into a small bowl; add 3 or 4 drops of the green food coloring (less if you are using gel food coloring)Â until the water is a light green color. Stir in the shreddedÂcoconut mixing together until all the white flakes get tinted light green.ÂSpread mixture ontoÂa parchment lined baking sheet and set aside until completely dried.
Fill the cooled nests with the green coconut “grass†. PlaceÂ3 eggs in each nest and place them on a serving tray.
They can be stored in an airtight container for up to 2 days.
Makes: 16-20 nests
TIP: Freeze any unfilled nests in a single layer on wax paper in an airtight container. They’ll keep frozen for up to 1 month. When you’re ready to use your frozen nests, allow them to sit at room temperature for 15 minutes before filling them.
