TOFUÂ SAUSAGES RECIPE
INGREDIENTS
450 gr. Firm Tofu (or 600 gr. Soft)
1-2 eggs, lightly beaten
1-1/2 Tbsp. balsamic vinegar
1 tsp. chili powder
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano
1/2 tsp. paprika
1/2 tsp. ground cumin
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 cup rolled oats, ground
1/2 cup bread crumbs
1/2 cup. ground pecans (or walnuts )
2-3 Tbsp. Semolina flour
Oil for frying
DIRECTIONS
Mash tofu or grate it into a large mixing bowl. Add the eggs and stir together.
Stir in the herbs and spices; add the balsamic and mix until well distributed and the mix is well blended.
Add the bread crumbs, pecans (or walnuts) and the ground oats.
Stir together until well mixed. (If mixture feels too soft, more grinded oats can be added).
Sprinkle a cutting board or working surface with semolina flour.
Take a heaped tablespoon of the mixture and using your hands form the mixture into little sausage, about 4 inches long (use some flour on your hand to roll them ) and place them on a floured dusted board .
Heat some oil, enough to cover the bottom of a non-stick frying pan. Place sausages in the hot oil and fry sausages until light brown on all sides.
Remove to a plate and cover to keep warm until all done.
Serve with mashed potatoes, rice or tried them with your favorite sauce.
